Well the title says it all. I broke my foot. Since as you know, Ravi and I work opposite shifts. I need to create easy meals that have little cleanup, so after a long day at work we can eat and rest my foot.
Here we go...
Breakfast- The Normal Fare: Cereal, Oatmeal, Friday French Toast with Appa.
Saturday: Spiced Apple Muffins
Lunch- Leftovers, Sandwiches, Salads
Dinner-
Sunday- Cream Cheese Chicken Enchiladas (I did not make these but my dear friend from church blessed us with dinner... they were yummy)
Monday- Taco Salad (My Mommy came to the rescue here too and made us dinner)
Tuesday- Hot Dogs (I wanted something easy since it will be my first day back to work with a broken foot. I do not want to fight Jeshu on eating)
Wednesday- Crock Pot Orange Pork, CousCous, Stir fry Veggies
Thursday- Crock Pot Enchilada Yes I know.. Enchiladas two times in a week, but this was planned and shopped for :)
Friday- Indian food
Saturday- Shredded Elk Sandwiches- We have a great friend that unloads his older elk onto us each year. November is coming up soon, so I am pushing Ravi to use the elk. I am going to try this recipe. This was on an app on my Ipod. I need to post the recipe.... if it turns out
