Each week I am going to try to bring you some Indian Recipes so that *maybe* you can try a little spice in your life.
But first here is a freebie. We had some friends over for dinner tonight, I needed to find a great dessert. I had a lot of fresh strawberries around the house, so I knew I needed to use them up. I headed over to my favorite website for recipes. I searched for a few minutes and saw something that caught my eye.
I made it and it was a HUGE hit so much so that my friend asked to take the recipe home. I have a retirement party where I gotta bring a dessert to, and I am going to make this with some mangoes I have. I may have found a new "go to" recipe when it comes to summer desserts.
So at the risk of having someone bring the same dessert to a potluck (though it is not a bad idea it is that good), I am going to share it with you.
Strawberry Cobbler Cake
Ingredients: Servings: 8
- 1/4 cup butter or 1/4 cup margarine, softened
- 3/4 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 3 cups fresh strawberries, cut in half lengthwise
- 1/4 cup all-purpose flour
- 1/4 cup sugar
- 1/4 cup butter or 1/4 cup margarine, chilled
Directions:
Prep Time: 20 mins
Total Time: 1 1/2 hrs

- 1 Beat 1/4 cup softened butter at medium speed with an electric mixer; gradually add 3/4 cup sugar, beating well.
- 2 Add egg and vanilla, beating well.
- 3 Combine 1 1/4 cup flour, baking powder, and salt; add to butter mixture alternately with milk, beginning and ending with flour mixture.
- 4 Spoon mixture into a greased 8-inch square baking dish.
- 5 Arrange strawberries on top, cut side down.
- 6 Combine 1/4 cup flour and 1/4 cup sugar; cut in 1/4 cup chilled butter with pastry blender until crumbly.
- 7 Sprinkle over strawberries.
- 8 Bake at 350 degrees for 1 hour or until a wooden pick inserted in center comes out clean.
- 9 Serve warm with ice cream or whipped cream.
