Recipe of the Week- Salmon Burgers

Here is a recipe from this weeks menu.  I am always trying to find new meals that my son will eat.  He really loves fish, but I thought to try something new.   He really loved it.  This recipe originally said it serves 1.  I was able to actually make 4 patties. We ended up freezing two for later. 

Salmon Burgers  (serves 2-4)

1/4 cup bread crumbs
1 can (7.5 oz) salmon drained and flaked
2 Tbs celery stalk finely chopped
1 Tbs finely chopped shallot
1 Tbs Mayo
salt and pepper to taste
2 tsp olive oil

Mix breadcrumbs, celery, salmon, shallot, and mayo in a bowl.  Season with salt and pepper and mix well.  Form into a 3/4-inch-thick patty, transfer to a plate, and refrigerate for 10 minutes.
In a medium nonstick skillet, heat oil over medium heat.  Add patty and cook, flipping once, until brown and heated through, about 8 minutes. 

Meanwhile, split and toast remaining bun.  Serve burger on bun with your choice of ketchup, mayo, and mustard.  Add tomato, lettuce, and whatever else.
