Menu Plan Monday

 
 
Better late than never. Here is my menu for the week.  I had to make some last minute changes because Ravi ended up having to work 22 hours today.  Yes, he was only home 2 hours today and they were not back to back.  So that means he will have a few days off so he does not go into overtime.  Which means he will be with us for dinner.  One problem, I plan easy kid friendly and healthy meals he does not care as much for.  So a few minor adjustments and it was good.  If you would like more menu ideas please check out this  site.  She has so many links to great menu plans.
Breakfast:

A mix of cereal, oatmeal, and cream of wheat
I am going to make this baking mix up for pancakes and such.
Friday French Toast with Appa
Waffles (my parents are on vacation and we are keeping an eye on the place.  I am going to borrow their waffle iron.. shhhhh)


Lunch
Sandwiches, Quesadillas, Mack and Cheese
Money Saving Mom gave me a great idea for lunch meal  Peanut Butter and Jelly Sushi Rolls

Dinner 
Salmon Burger and Salad (will post the recipe later)
Baked Tacos,  Chips,  Black Bean Salsa, Salad 
Spaghetti and Meat Balls,  Green Beans
Leftovers
Indian food  (I will start posting the recipes for Indian food on Friday)
Korean Bulgogi (BBQ Beef), Rice,  Grilled Veggies
Pork Fajitas,  Salad, Fruit Salad  (this is a Once A Month Cooking recipe, I make up a big batch and freeze it.  It works great for a quick meal.  

I am trying to get back into eating healthy.  I have a plan to loose 3 lbs a month for the next year and I will be at my goal next year when we go to India.   What is your favorite healthy meal?

Thanks Paige... Ya do you see why I have been MIA lately??? Making over two blogs is hard.. I even dived into editing HTML... AHHHH

Looking forward to seeing some Indian recipes! We haven't actually cooked Indian in at least a week, if you can believe it. Biju did bring some frozen dahl down from the freezer the other day, so he'll have that for his lunches.

Thanks Kalinda- I think I am going to start with Garam Masala. We purchase ours in India, but if you do not have access to any masala then you are not really able to make good Indian food. So I may actually post two recipes, so that I can have something people can actually cook.
