I am always looking for new recipes. I like to experiment with new twists on old favorites. However, since Ravi works swing shift, he is not here for dinner. I have two choices. 1) make a normal, great "adult" meal and risk Jeshu not liking it or 2) Make a healthy kid friendly recipe and have more chances of Jeshu actually eating on his own. I choose the second. So please if you have your menu for the week or recipes you are going to try, comment. I would love to share recipes.
Breakfasts are normally easy around our house. I normally have oatmeal every morning. Jeshu has a choice of cold cereal, Cream of Wheat, Oatmeal, Friday French Toast with Appa (Ravi's tradition), and occasionally I will make something something mid week. Saturdays are always a special breakfast.
Lunches are usually leftovers for me and some sort of sandwich for Jeshu.

I usually make a fritatta on Saturday morning. :)
One of my favorites is Pumpkin Scones with Pumpkin butter. http://coffeeworks.blogs.com/coffee_and_tea/2005/10/pumpkin_scones.html
Although, we are now being diligent with adding eggs or other protein with bread based breakfasts because of my hypoglycemia.
